Easy Oven Lasagna



Ingredient 
1 pound Hamburger
1 jar spaghetti sauce (1 lb 10 oz) (I like to use Six Cheese by Ragu)
Lasagna noodles (not oven ready)
1 1/4 cups Mozzarella cheese
1 1/2 cups small curd cottage cheese
1 teaspoon salt
1/2 cup water
1/4 cup Parmesan Cheese


Preparation

Brown hamburger. Add water, sauce, salt, and bring to a boil. In a 9x13 baking pan, layer sauce, uncooked pasta, 1/2 cup cottage cheese, 1/4 cup mozzarella cheese, and 1 tablespoon Parmesan. Repeat layers 3 times ending with sauce and 1/2 cup of mozzarella cheese on top. Cover with foil and bake at 375 for 1 hour.  When done cut it into 15 slices.

Calories for on slice is  216 calories!


We like to serve it with a salad and cheesy garlic bread!

Egg White Omelet


Egg White Omelet is what I love to have in the mornings!!

Ingredient
2 Egg whites
1 tablespoon Cheddar Cheese

Preparation
Put Egg whites in pan and start to cook when the top layer is still runny add the cheese and finish cooking!

Total for this is 66 calories!!

I like to add a little salt and pepper to mine!

English Muffin Pizza

Ingredient
English Muffin
Pizza Sauce
Mozzarella Cheese

Preparation
Cut the English Muffin in Half, spread 1 Tablespoon pizza sauce on each half, then add 1 tablespoon of Mozzarella Cheese to each half.

The whole meal is only 157 calories!!

I love making these! I like to toast mine in the toaster first then add the toppings and put them in the oven on broil! Makes them tasty!!

Make sure to check the different brands of English muffins for the calories. I have used the Fred Meyer brand and also the Albertsons brand and they are both only 110 calories where the Walmart brand is 130 calories just for the muffin.  (if you use Walmart brand add 20 calories)

To make if fun for your kids let them make faces with olives and the pepperoni or any other toppings!

Spicy Pulled Pork

Ingredients

  • 2 1/2  pounds  boned beef chuck
  • 1  can (14 1/2 oz.) chopped tomatoes
  • 1  can (7 oz.) chipotle sauce (see notes), or 7 ounces spicy salsa
  • 1  can (4 oz.) diced jalapeƱo chilies, drained
  • 1  onion, chopped
  • 3  cloves garlic, minced
  • 2  tablespoons  ground dried New Mexico chile or regular chili powder
  • 1  tablespoon  honey
  • 2 1/2  teaspoons  kosher salt
  • 1  teaspoon  ground cumin
  • 2  cups  beef broth

Preparation

1. Rinse beef and trim off excess fat. Put in a slow-cooker (at least 5 qt.). Add tomatoes (with juice), chipotle sauce or salsa, jalapeƱos, onion, garlic, ground chile, honey, salt, and cumin; pour broth over the top.
2. Cover and cook on low until beef is very tender when pierced, 8 to 10 hours. If desired, remove lid for last 30 minutes to allow sauce to reduce and thicken.
3. With a heavy fork, transfer meat to a rimmed board or plate. Shred with two forks. Serve in a tortilla.

I like to serve mine with Spanish Rice and Refried beans! Top with sour cream, salsa, and shredded lettuce.

4 oz Beef                        330  cal.
Tortilla                            150  cal
Refried beans 1/2 cup     100  cal
Spanish Rice 1/4 cup      140  cal

Total with out toppings   720 Cal
Toppings 
1 Tablespoon                  30 cal
1 Tablespoon Salsa           5 cal
Lettuce I don't count because it takes 1 1/2 cups to equal 15 calories.

Toppings total                  35 cal

Now 1 full serving is way to much for me so I usually only have a half of one. Also you can always do less bean or less Spanish Rice to make it even lower in calories.

    


Super Easy Spicy Joes!


I love fast and super easy recipes, one of my favorites is from the Campbells Soup recipes. The combination of ingredient doesn't sound very good but it is actually very tasty!!

Ingredients

1 Pound Hamburger
1 can Tomato Soup
1 cup picante Sauce (medium)
1 cube of Chipotle
Cheddar Cheese

Preparation

Brown the hamburger and then add the rest of the ingredients except the cheese. Then serve over  1/2 of a  hamburger bun and top with cheese.

The chipotle cubes I have to special order but it is really good even with out it.

1/2 cup Spicy Joe mix               160.0  Cal
1/2 Hamburger bun                     90.0  Cal
2 tbs Cheese                               41.5  Cal

Total for the meal is      291.5 Cal

Sometimes to make it less I leave the cheese off and it is still really good! The actually recipe calls for chunky salsa but I just use the regular so it depends on how thick you want your Spicy Joe sauce to be!
